How to Pambazo


Hello everybody!!!

Today I want to share with you guys a little bit of my culture with some amazing Mexican food.  Now this is traditional Mexican food not something very common to see on the States but it is so good! My mouth is watering just looking at the pictures...lol  It is called a Pambazo they date back to the colonial times, when the Spanish invaded Mexico.  This pambazo is the "traditional" Mexico City style.  Different regions have made changes and adapted the recipe to its location. So here is a quick break down of how it is made and the changes you can do for a vegetarian style pambazo.  (Yes I am a tree huger. lol)


STEP 1: Make the SALSA. 
It is red guajillo pepper that is cooked on a pan with NO oil or water. Ones it gets toasted, you add a little bit of water and steam it. You then add the peppers and liquid to a blender.

 Add garlic...
 Add a little bit of salt and maybe some more water if you feel it needs it and blend! You will then have the Salsa just like the one on the bottom picture.
STEP 2: STUFFING You will also cook potatoes, peal them and chopped them.  Slice onions, pan fry them with just a little bit of oil. When they are starting to get a golden color add the chorizo.  When the chorizo is cooked add the chopped cooked potatoes and make sure it is all mixed well.  You should end up with a beautiful mess like the one we have here.
**For vegetarians you can use vegan chorizo or skip the chorizo and add some of the salsa to the potatoes and onions.**
 STEP 3:  You dabble the outer crust of the bread with the salsa.  We use what is called a bolillo for the bread.  But you can use any loaf of bread as long as it is similar in shape to what we have in the picture.
 STEP 4:  You then put in on a hot pan with oil to pan fry the outside of the bread and give it a nice toast.
 Step 5: You open the bread and also cook the inside just for a few seconds you want it to be warm but not too toasty. 
 STEP 6:  You add the potatoes and chorizo to one side.
 You then add some sliced lettuce...
 You add green salsa (if you want the home made recipe let me know and we can post it.)
 Add CHEESE!!!! any cheese you want or like.
 Step 6: On the other side of the bread we have not touched add some sour cream.

STEP 7: You put one piece on top of the other and your pambazo is ready!  It is ready for you to enjoy.  It is a good recipe to do and also a good recipe to transform for the vegetarians out there.  I had to adapt a  lot of food after become a vegetarian and this was a simple dish that I was able to enjoy.  Keep my culture, have the memories of my mother and keep for the future.  Let me know what you guys think of this traditional Mexican dish.  Would you be willing to give it a try or is it a pass?

11 Day Migraine

Hi Welcome back to my life! I hope you all had a great weekend.  I actually did, it was my son's birthday weekend.  My oldest turned 7.  It was a very nice weekend for the most part.  I can't remember most of it to be quite honest, no I was not drunk or on any un-prescribed drugs.  I have been dealing with a migraine sense August 12th.  I don't think anybody that came over my house noticed much of a difference I was talking and trying my best to act normal.  There were moments I would zone out and had no idea what was going on but for the most part I pushed through.  It started August 12th as we were at the park catching pokemons. lol Yes we play Pokemon Go.  My husband got me hooked on that game.  I started feeling some vertigo and a mild migraine nothing major.  I took my meds and didn't think much of it.  The next day I felt worse. I felt like I couldn't get out of bed.  The light bothered me, the noise I just did not want to get out of bed.  I was nauseous

Pho Feel'n Asian

Pho Feel'n Asian has opened its doors in Gastonia NC.  If you want to try great pho and some authentic Asian cuisine give this local restaurant a try.  The pho had amazing flavor and variety.  My husband had the meat, I tried the tofu.  Ones I started eating it there was no way I could stop, even after I was full.  I also tried their iced coffee and it was one of the best coffee's I have had in the Gastonia area.  On top of their great food, the staff was very friendly and kind.  I went with my three children (7, 6 and 4 year old.)  They were very patient, friendly and helpful with the kids.  They don't have a kids menu but many of the Gastonia restaurants don't seem to have one. Yet it is family friendly and from a price point is also very affordable.  I do recommend it, whether you have tried pho before or not.  Go support a family owned local business and see the community around you grow!

Yoga after a stroke

Life puts all of us through so many challenges you sometimes sit and wonder how are you still here.  How did you find the courage and strength to push through it all.  Or at least I seem to be thinking about it a lot lately.  But then I also think of all the things I have accomplished and how much of a bad ass I have become from it all.  My most resent struggle was the mini stroke I had in April 27th.  It has been something that happened suddenly and has taken a long time to recover from.  Three months later I still cannot get back to the person I was before the stroke. Before the stroke I used to do yoga almost every day for about an hour.  I loved it so much! It took me a while to find a love for yoga but ones I found that love I never let it go.  After the stroke my mobility seemed to be slow.  It was hard to walk, to go up the stairs or even raise my hands above my shoulders.  For the first month I needed help with basic things like, driving, showering, cooking, cleaning, taki
