Mexican Veggie Breakfast

Welcome back to my page.  I am going to share with you guys one of my favorite breakfast.  I am a vegetarian and I also don't eat much bread.  (I know I have a boring life! lol.) But here is something I love to make for breakfast and I feel is not very hard to make either.





Step 1: You grease up your pan I use olive oil



 Step 2: You chop up your veggies, I am using tomato, onions, and jalapenos. You put them on the pan and cook until soft. (I forgot to take that picture....sorry.)
 Step 3:  You add a bit more oil and then put a tortilla just for about 5-8 seconds and then flip for about another 5-8 seconds and remove from the pan.  It should be golden but soft.

 Step 4: You place the tortillas on the bottom of the plate I use 3.  You then add your veggies on top of the tortilla.
 Step 5: Sunny side up eggs. You make two of them bad boys and place it on top of the veggies when you are done.  I like to add a few slices of avocado to my plate.  You can add salsa or cheese also to it.


And here is it, my magical mouth watering Mexican veggie breakfast.  It takes about 10 minutes to make the dish not very long for everything you are getting.  I love it and it keeps me full for hours!!! 11 Day Migraine

Hi Welcome back to my life! I hope you all had a great weekend.  I actually did, it was my son's birthday weekend.  My oldest turned 7.  It was a very nice weekend for the most part.  I can't remember most of it to be quite honest, no I was not drunk or on any un-prescribed drugs.  I have been dealing with a migraine sense August 12th.  I don't think anybody that came over my house noticed much of a difference I was talking and trying my best to act normal.  There were moments I would zone out and had no idea what was going on but for the most part I pushed through.  It started August 12th as we were at the park catching pokemons. lol Yes we play Pokemon Go.  My husband got me hooked on that game.  I started feeling some vertigo and a mild migraine nothing major.  I took my meds and didn't think much of it.  The next day I felt worse. MTHFR Mutation and me!

MTHFR is a DNA mutation that is not commonly checked on a regular check up or regular blood work.  But thankfully this year (2018) thanks to my new and wonderful Neurologist she suggested I saw a Hematologist.  He ran 18 tubes of blood and multiple test I had never had done before.  There I was told it seemed like I had a mutation on MTHFR.  But requested for all the lab work to be done again to make sure it was correct and come back in a month.  The labs take about 3 weeks to be processed.  At at that point I found some relief but also fear.  I had no idea what I was dealing with I got a packed of information with the title:   Methylenetetrahydrofolate reductase catalyzes Mutation. The title it self freaked me out!!  But I did as much research as I could in that month.  It seems as if this condition was just discovered in 2006. So there is no cure for it, not a lot of information either but the Doctors are just treating the symptom...

Pho Feel'n Asian

Pho Feel'n Asian has opened its doors in Gastonia NC.  If you want to try great pho and some authentic Asian cuisine give this local restaurant a try.  The pho had amazing flavor and variety.  My husband had the meat, I tried the tofu.  Ones I started eating it there was no way I could stop, even after I was full.  I also tried their iced coffee and it was one of the best coffee's I have had in the Gastonia area.  On top of their great food, the staff was very friendly and kind.  I went with my three children (7, 6 and 4 year old.)  They were very patient, friendly and helpful with the kids.  They don't have a kids menu but many of the Gastonia restaurants don't seem to have one. Yet it is family friendly and from a price point is also very affordable.  I do recommend it, whether you have tried pho before or not.  Go support a family owned local business and see the community around you grow!
